The first in a diptych that celebrates the seasons on the Isle of Orkney. This bottle, The Dark focuses on the autumn and winter seasons. The Dark is a 17 year old single malt that has been matured in sherry casks, giving it aromas of dried fruits, nuts and herbs where they are joined by distinctive notes of smoky peat.

Description

It was Magnus Eunson who founded Highland Park, back in 1798. Much is made of his Viking heritage around the distillery and there is little doubt that, being based on Orkney some 16km north of the Scottish mainland, that the climate is certainly pretty wild being surrounded by stormy seas. Despite its remoteness though, the temperature is relatively steady across the year (rarely varying out of between 2 and 16 degrees) which is perfect for maturing whisky.


Tasting notes

More creamy vanilla, sweet lemon peel and tropical fruits, rich coconut balanced by hallmark aromatic smokiness.

Rob Roy Cocktail Recipe

If there was ever a cocktail to make you feel the glitz and glamour of the history and chic society of New York, it's ordering a Rob Roy. The Rob Roy is a riff on a Manhattan, with their only difference being the base liquor. A Rob Roy is made using blended Scotch while a Manhattan is made with Rye. As such, the cocktail is malty and smooth, with a bit of spice on the finishing end.
