The Raspberry Bellini is a refreshing take on the popular fizzy cocktail, which is a perfect brunch classic. Originally, the Bellini was an Italian cocktail made with peach puree and Prosecco, and created in a bar in Venice using the season's freshly harvested peaches. Now, you could make a bellini  All you need to whip this light and fruity cocktail up at home is frozen raspberries, Prosecco, vanilla extract and some mint to garnish.

It’s perfect for serving to guests on a hot summer’s day, such as at a garden party or BBQ. We recommend pre making the raspberry puree and leaving it in the fridge, so you can truly be the host with the most and whip up a delicious Bellini in minutes. When served with mint and fresh raspberries, it’s a visually stunning drink you’re sure to go back to again and again.

Ingredients

  • 1 package (10 ounces) frozen sweetened raspberries, thawed

  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 4 cups chilled prosecco
  • Mint leaves and fresh raspberries, optional

Method

  1. Place raspberries in a blender; cover and process until pureed. Press through a fine-mesh strainer into a bowl; discard seeds. Stir in lemon juice and vanilla.
  2. Fill each champagne flute with 2 tablespoons raspberry mixture; top with prosecco. If desired, garnish with mint and fresh raspberries.
